What is a BLINTZ?

A Blintz is a thin egg-leaf pancake folded over fillings of either cheese or fruit.

Blintzes have been traced back to the forming of civilization in Persia, when during the great famine, the Persian housewife discovered the life-giving qualities of the pancake. To extend her meager resources, she made these pancakes wafer thin. Recognizing the necessity of varying the diet, the housewife placed cheese in the center of the thin pancake, folded over the edges and rolled; hence the world's first BLINTZE.

As civilized man moved west; Blintzes moved with him. Each group of people added their own refinements. The French served Blintzes with traditional wines and called them 'crepe suzettes'.

The Hebrew people regard Blintzes as a traditional happy dish. It was during the middle ages when Judith, daughter of Hasmonians, fed blintzes to the leader of the Hebrew's foes-he ate the delicious Cheese Blintzes and drank his fill of wine. Judith captured the foe and won a victory for her people. Thus we get the happy association with Blintzes.

 

 

 

Blintz Souffle Recipe

 

2 packs Ratner's Blintzes (any flavor)

1/4 lb. Butter

4 eggs, well beaten

1 1/2 cups sour cream

1/4 cup sugar

1/2 Teaspoon salt

1 Teaspoon vanilla

1 Tablespoon Orange Juice (optional)

 

Melt butter in 2 quart casserole and place blintzes over butter in one layer. Blend other ingredients with well beaten eggs and pour over blintzes. Bake for 45 minutes in 350 degree oven or until the tops start to brown. Serve with powdered sugar, strawberries, raspberries or sour cream.

 

Serving Suggestion: We suggest using Cheese Blintzes and fruit filled blintzes. When placing the blintzes in the casserole, alternate the cheese blintzes with the fruit blintzes for a unique variety!!
